Coffee-Spice Chicken and Fruit-Basil Salsa


  • 3 c seedless watermelon cubes, cut into 1/2-inch chunks
  • 1 large ripe nectarine, pitted and cut into 1/2-inch chunks
  • 3 T finely chopped red onion
  • 1 T fresh lemon juice
  • 2 T instant coffee
  • 1 T grated, peeled fresh ginger
  • 1 T olive oil
  • + 4 more ingredients
    • 1 ¼ t ground allspice
    • ¾ t salt
    • 8 skinless, boneless chicken breast halves
    • ½ c packed fresh basil leaves, coarsely chopped
