Ingredients

  • 1/3 cup kosher salt (such as Diamond Crystal)
  • ¼ teaspoon five-spice powder
  • 3 ½ cups water
  • 1 ½ teaspoons dark brown sugar
  • 2 tablespoons five-spice powder
  • 2 tablespoons hoisin sauce
  • 2 teaspoons dark sesame oil
  • + 7 more ingredients
    • 3 tablespoons dark brown sugar
    • 2 tablespoons low-sodium soy sauce
    • 2 teaspoons minced fresh ginger
    • 1 ½ teaspoons low-sodium soy sauce
    • Cooking spray
    • 4 (6-ounce) boneless chicken breast halves
    • 1 cup ice

Combine first 4 ingredients in a large bowl, stirring until salt and sugar dissolve. Stir in 2 tablespoons five-spice powder. Pour salt mixture into a large zip-top plastic bag.
