Ingredients

  • 8 ounce(s) imitation crab meat or ½ pound of shrimp - chopped

  • ¼ cup(s) red bell pepper - diced
  • 1 tablespoon(s) fresh cilantro - chopped
  • 1 tablespoon(s) fresh basil - chopped
  • salt and pepper to taste

    • 2 red bell peppers - roasted, peeled and seeded

    • ½ cup(s) grated colby jack cheese
    • SAUCE:
    • PEPPERS:
    • 8 poblano chiles or your favorite variety of chile pepper
    • 4 ounce(s) mild goat cheese
    • 1 serrano chile - seeded and finely chopped
