Goat Cheese and Crab Stuffed Peppers
Ingredients
- 8 ounce(s) imitation crab meat or ½ pound of shrimp - chopped
- 1 tablespoon(s) shallots
- 1 tablespoon(s) lemon peel - grated
- ¼ cup(s) red bell pepper - diced
- 1 tablespoon(s) fresh cilantro - chopped
- 1 tablespoon(s) fresh basil - chopped
- salt and pepper to taste

- 2 red bell peppers - roasted, peeled and seeded
- 1 cup(s) chicken stock

- PEPPERS:
- 8 poblano chiles or your favorite variety of chile pepper
- 4 ounce(s) mild goat cheese
- 1 serrano chile - seeded and finely chopped
