  • 1 pound sirloin steak (1 inch thick), trimmed of excess fat
  • 1/3 cup extra-virgin olive oil
  • ½ teaspoon black pepper
  • 2 teaspoons salt
  • 4 large garlic cloves
  • 2 tablespoons fresh lemon juice
  • 100 6-inch wooden skewers
