Ingredients

  • 2 tablespoons fresh Italian parsley
  • 1 4 1/2-pound whole chicken (preferably organic)
  • 1/3 cup fresh Italian parsley
  • 1 tablespoon red wine vinegar
  • 1 clove garlic
  • ½ clove garlic
  • 2 tablespoons fresh basil
  • + 12 more ingredients
    • 1 tablespoon fresh lemon juice
    • ¼ cup fine sea salt
    • 1 shallot
    • 2 tablespoons honey
    • 2 tablespoons fresh rosemary
    • 2 tablespoons fresh cilantro
    • ½ cup extra-virgin olive oil
    • 2 teaspoons pickling spice
    • 1/3 cup fresh basil
    • 2 tablespoons fresh thyme
    • ¼ cup extra-virgin olive oil
    • 1 pinch dried red pepper flakes

Bring 2 cups water, 1/4 cup salt, and pickling spice to boil in large saucepan, stirring until salt dissolves. Remove from heat; add 6 cups water and honey. Cool brine to room temperature.
