Grilled Butterflied Chicken Breasts with Cilantro-Lime Butter

Ingredients
- 1 Tbs. extra-virgin olive oil
- Kosher salt
- 2 Tbs. fresh lime juice
- ¼ tsp. Green Tabasco or other jalapeño hot sauce
- ½ tsp. finely grated lime zest
- 2 Tbs. unsalted butter, softened
- 1-½ tsp. finely chopped fresh cilantro; plus 2 large sprigs for garnish

In a small bowl, mash the butter, chopped cilantro, lime zest, Tabasco, and 1/4 tsp. kosher salt with a wooden spoon or rubber spatula to form a smooth butter.
