Ingredients

  • 2 tablespoons olive oil
  • 6 skinless boneless chicken breast halves
  • 1 ½ teaspoons red wine vinegar
  • 2 medium zucchini
  • 1 red bell pepper
  • 1 medium Japanese eggplant
  • 2 medium tomatoes
  • + 2 more ingredients
    • 1/3 cup basil
    • 1 red onion

Prepare barbecue (medium-high heat). Place first 5 ingredients in large bowl. Drizzle oil over and sprinkle generously with salt and pepper; toss to coat.
