  • 4 boneless chicken breast halves with skin
  • 2 teaspoons lime peel
  • ¼ cup fresh cilantro
  • ¼ cup red onion
  • 2 tablespoons olive oil
  • Nonstick vegetable oil spray

    • 1 1/3 cups honeydew or other melon
    • 1 teaspoon seeded serrano chile
    • 2 tablespoons fresh lime juice
