Grilled Chicken with Hot and Sweet Dipping Sauce

Ingredients

  • 1 teaspoon dried red pepper flakes
  • ¼ teaspoon salt
  • 1 garlic clove
  • ½ cup sugar
  • ½ cup rice vinegar
  • Hot and sweet dipping sauce:
  • 1 teaspoon Thai fish sauce

    • 1 tablespoon ground coriander
    • 6 garlic
    • 4 tablespoon black peppercorns
    • Peppercorn-coriander flavor paste:
    • 4 tablespoon peppercorn-coriander flavor paste (recipe follows)
    • 3 tablespoon Thai fish sauce
    • 4 split chicken breasts, bone-in and skin on (about 3 pounds)
