Grilled Coffee-Brined Chicken Breasts

Ingredients

  • ¼ cup kosher salt
  • ¼ cup packed dark brown sugar
  • 3 cups water
  • 4 slices lemon (¼ inch thick)
  • 1 Tbs. black peppercorns
  • 1 Tbs. mustard seeds
  • 1 Tbs. coriander seeds
  • + 4 more ingredients
    • 4 boneless skinless chicken breast halves (6 to 8 oz. each), trimmed and rinsed
    • 1 cup wood chips (such as oak or hickory), soaked in water for 1 hour and drained (optional)
    • ¾ cup strong brewed coffee
    • 2 Tbs. melted butter or olive oil
