Grilled Goat Cheese and Spinach Stuffed Spatchcock Chicken

Ingredients

  • 4 sprig(s) fresh thyme for garnish
  • 2 sm lemons, quartered
  • 2 Tbsp vegetable oil
  • 1 tsp fresh ground black pepper
  • 1 tsp paprika
  • 6 oz fresh baby spinach, chopped
  • 1 tsp salt
  • + 6 more ingredients
    • 1 md whole chicken (approximately 3 pounds)
    • 2 Tbsp fresh thyme leaves
    • 2 tsp lemon zest, divided
    • 4 oz goat cheese, crumbled
    • 4 clove garlic, minced
    • 4 oz chopped sun-dried tomatoes in oil, drained

1 Prepare grill to medium heat. 2 Drain and chop the sun-dried tomatoes, reserving drained oil. Use a paper towel to remove excess oil from the chopped tomatoes.
