  • ¼ cup white grape juice

    • ½ cup verjus or 1/4 apple cider vinegar
    • 4 tablespoons butter
    • 2 ½ cups low-salt chicken broth
    • 1 ½ tablespoons fresh mint
    • 1 garlic clove
    • 1 tablespoon onion
    • 1 teaspoon finely grated lemon peel
    • ¼ cup sugar
    • 2 racks of lamb

    • 2 cups dry red wine
