GRILLED LIMONCELLO CHICKEN WITH CALIFORNIA RAISINS
Ingredients
- Limoncello Chicken
- 4 boneless, skinless chicken breasts (about 1 1/4 lbs.)
- ½ c limoncello (lemon liqueur)
- ¼ c fresh lemon juice
- ¾ t salt
- ¾ t red pepper flakes
- 2 medium shallots, minced
- + 6 more ingredients

- 6-8 very thin slices prosciutto
- Chopped fresh rosemary
- Limoncello Plumped Raisins
- ½ c California Golden Raisins
- 2/3 c limoncello
- 2 lemon slices, about 1/4-inch thick with seeds removed
Rinse chicken and place in a gallon-size resealable bag. Add 1/2 cup limoncello, lemon juice, salt, red pepper flakes and shallots to bag. Seal bag and turn several times to mix ingredients; refrigerate overnight. Remove chicken from bag and discard marinade. Wrap prosciutto around chicken breast...
