GRILLED LIMONCELLO CHICKEN WITH CALIFORNIA RAISINS

Ingredients

  • Limoncello Chicken
  • 4 boneless, skinless chicken breasts (about 1 1/4 lbs.)
  • ½ c limoncello (lemon liqueur)
  • ¼ c fresh lemon juice
  • ¾ t salt
  • ¾ t red pepper flakes
  • 2 medium shallots, minced
  • + 6 more ingredients
    • 6-8 very thin slices prosciutto
    • Chopped fresh rosemary
    • Limoncello Plumped Raisins
    • ½ c California Golden Raisins
    • 2/3 c limoncello
    • 2 lemon slices, about 1/4-inch thick with seeds removed

Rinse chicken and place in a gallon-size resealable bag. Add 1/2 cup limoncello, lemon juice, salt, red pepper flakes and shallots to bag.
