Ingredients

  • 2 chunks of a medium smoking wood, like hickory or oak
  • 1 teaspoon Sriracha
  • 2 tablespoons freshly grated ginger
  • 4 garlic cloves, minced
  • ¼ cup rice vinegar
  • ¼ cup ketchup
  • ¼ cup soy sauce
  • + 10 more ingredients
    • ¼ cup packed light brown sugar
    • 18 oz pineapple juice
    • For the Glaze
    • 4 split chicken halves
    • 1 tablespoon freshly grated ginger
    • 6 garlic cloves, minced
    • 1 tablespoon vegetable oil
    • 2 cups soy sauce
    • 2 quarts cold water
    • For the Brine

1. To make the brine, combine the water and soy sauce in a large bowl. Heat oil in large saucepan over medium-high heat until shimmering.
