Ingredients

  • ½ tsp. freshly ground black pepper
  • ½ tsp. ground allspice
  • 1-½ Tbs. vegetable oil
  • 4 boneless skinless chicken breast halves (6 to 8 oz. each), trimmed, rinsed, and patted dry
  • ½ tsp. onion powder
  • 2 cloves garlic, minced
  • ¼ cup dark rum
  • + 10 more ingredients
    • ¼ cup packed dark brown sugar
    • ½ tsp. ground cinnamon
    • ½ tsp. dried thyme
    • 1 tsp. ground coriander
    • 1-½ tsp. kosher salt
    • 1 Tbs. packed dark brown sugar
    • ¼ cup pineapple juice
    • ¼ cup salted butter
    • 2 scallions (white and green parts), minced
    • ¼ to ½ tsp. cayenne

Combine the brown sugar, salt, coriander, pepper, thyme, onion powder, allspice, cinnamon, and cayenne in a small bowl and stir to mix.
