Island-Spiced, Pineapple-Glazed Grilled Chicken Breasts

Ingredients
- 1 tsp. ground coriander
- ½ tsp. ground cinnamon
- ½ tsp. dried thyme
- 1-½ Tbs. vegetable oil
- 1-½ tsp. kosher salt
- 2 cloves garlic, minced
- ¼ cup salted butter

- ½ tsp. freshly ground black pepper
- ½ tsp. ground allspice
- ¼ cup dark rum
- ¼ cup packed dark brown sugar
- 1 Tbs. packed dark brown sugar
- 4 boneless skinless chicken breast halves (6 to 8 oz. each), trimmed, rinsed, and patted dry
- ¼ cup pineapple juice
- ¼ to ½ tsp. cayenne
- 2 scallions (white and green parts), minced
Combine the brown sugar, salt, coriander, pepper, thyme, onion powder, allspice, cinnamon, and cayenne in a small bowl and stir to mix.
