  • ¼ teaspoon freshly ground black pepper
  • 1/3 cup Sauternes or other dessert white wine
  • 1/3 cup fresh lemon juice
  • ½ teaspoon salt
  • 1 teaspoon paprika
  • 1 (4-pound) roasting chicken
  • 1 tablespoon olive oil
  • + 3 more ingredients
    • 1 tablespoon grated lemon rind
    • ¼ cup minced fresh sage leaves
    • 2 large garlic cloves, grated
