Sesame-Crusted Chicken Paillards with Seaweed Salad

Ingredients

  • 4 boneless, skinless chicken breast halves
  • coarsely ground black pepper
  • ¾ ounce dried cut wakame seaweed
  • 4 red radishes
  • 2 tablespoons fresh cilantro
  • ½ cup sesame seeds
  • 4 teaspoons toasted sesame oil
  • + 8 more ingredients
    • 1 tablespoon kosher salt
    • 2 small Asian cucumbers
    • ¼ cup soy sauce
    • 1 dried red chile pepper
    • 2 tablespoons sugar
    • 1 cup rice vinegar (not seasoned)
    • Kosher salt
    • 2 scallions

Combine the rice vinegar, sugar, and chile in a small saucepan and cook over medium heat until the sugar is dissolved, about 3 minutes. Remove the chile and discard.
