South Fork Corn Salad
Ingredients
- ¼ cup(s) plain yogurt
- 2 teaspoon(s) fresh cilantro, chopped (optional)
- 2 teaspoon(s) fresh parsley, chopped (optional)
- salt and pepper to taste
- 1 small jalapeño, seeded and minced
- 6 large ears of sweet corn, husks and silks removed
- ¼ cup(s) chicken broth

- 12 cherry tomatoes, or one large tomato, chopped
- 1 large green bell pepper, seeded and chopped
- 1 stalk(s) celery, chopped
- 1 small red onion, chopped
