Ingredients

  • 2 tablespoons plus 2 teaspoons lime juice (from about 2 limes)
  • 3 tablespoons plus 1 teaspoon soy sauce
  • 4 cloves garlic, minced
  • 3 scallions including green tops, chopped
  • ¾ teaspoon ground ginger
  • 1 tablespoon cooking oil, plus 1 tablespoon more if needed
  • 1 cup canned low-sodium chicken broth or homemade stock
  • + 7 more ingredients
    • ½ cup chunky peanut butter, preferably natural
    • 3 boneless, skinless chicken breasts (about 1 pound in all)
    • 1/3 cup chopped peanuts (optional)
    • ½ teaspoon sugar
    • 1/8 teaspoon dried red-pepper flakes, or to taste
    • ¾ pound spaghetti
    • ½ teaspoon salt

1. In a medium, shallow glass dish or stainless-steel pan, combine the 3 tablespoons soy sauce, the 2 tablespoons lime juice, 1 tablespoon of the oil, the garlic, and the ginger.
