  • 2 tablespoons extra-virgin olive oil, plus more for the grill
  • ¼ cup apricot jam
  • ¼ teaspoon cayenne pepper
  • ¼ cup balsamic vinegar
  • 1 head butter lettuce, torn into pieces
  • Kosher salt
  • 3 ½ pounds chicken wings (about 25)
