Wolfgang Puck's Curried Chicken Satay

Ingredients

  • 1 whole skinless, boneless chicken breast (about 1 pound)
  • 1 ½ teaspoons curry powder
  • ½ teaspoon ground cumin
  • Salt and pepper
  • ½ cup plus 2 tablespoons peanut oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons mayonnaise
  • + 3 more ingredients
    • 1 tablespoon soy sauce
    • 2 teaspoons chopped fresh mint
    • ½ teaspoon ground coriander

1. Soak 24 short bamboo skewers in water for 30 minutes. Thinly slice the chicken breast lengthwise into 24 strips and thread them, through their long sides, onto the skewers.
