Anasazi and Black Bean Chili
Ingredients
- 1 cup chopped green bell pepper
- 1 ¼ cups dried black (turtle) beans (about 1/2 pound)
- 1 tablespoon ground cumin
- 1 1/3 cups chopped Spanish chorizo sausage (about 2 links)
- Chopped onion (optional)
- ½ cup chopped poblano pepper
- 3 (14.5-ounce) cans diced tomatoes, undrained

- 1 ¼ cups dried Anasazi beans (about 1/2 pound)
- 1 tablespoon chili powder
- 4 garlic cloves, minced
- 2 cups fat-free, less-sodium chicken broth
- Fat-free sour cream (optional)
- Cooking spray
- 2 teaspoons dried oregano
- 2 teaspoons minced seeded serrano chile
