Apricot and Lamb Tagine

Ingredients

  • 3 T canola oil
  • 2 large onions, thinly sliced
  • 2 lb boneless leg of lamb, trimmed and cut into 1-inch pieces
  • 1 t turmeric
  • 1 t ground ginger
  • ½ t coriander
  • ½ t cinnamon
  • + 7 more ingredients
    • ½ t salt
    • ½ t freshly ground black pepper
    • ¼ t ground allspice
    • 3 c lower-sodium chicken broth
    • 1 (15-ounce) can chickpeas
    • 1 c dried apricots (about 6 ounces)
    • 1 T honey
