Black & White Soup

Ingredients

• Black Bean Soup
• 1 large onion
• ½ large green bell pepper
• ½ large yellow bell pepper
• 1 ½ cups chicken stock or canned low-salt chicken broth
• 1 cup whipping cream
• 2 garlic cloves

  • ¼ cup all purpose flour
  • ½ large red bell pepper
  • Sour cream
  • Purchased tomatillo salsa
  • 1 cup whole milk
  • 8 ounces sharp white cheddar cheese, grated

Melt butter in heavy large pot over medium heat. Add peppers, onion and garlic. Sauté vegetables until tender, about 6 minutes. Add flour and stir 2 minutes. Whisk in stock, then milk and cream.
