Ingredients

  • 4 cups brown rice
  • 2 tablespoons vegetable oil
  • 1 ½ teaspoons chili powder
  • Kosher salt and freshly ground black pepper
  • ½ cup cilantro
  • ¾ teaspoon cumin seeds
  • 3 cups chicken stock or low-sodium chicken broth
  • + 9 more ingredients
    • 1 teaspoon fresh lime juice
    • 2 15-ounce cans black beans
    • 1/3 cup green bell pepper
    • 3 cloves garlic
    • 1 2-3-pound rotisserie chicken
    • 1/3 cup red onion
    • 4-6 lime wedges
    • 1 teaspoon ground coriander
    • 1 cup Granny Smith apple
