Ingredients

  • 2 ½ tablespoons olive oil
  • ½ teaspoon freshly ground black pepper
  • 2 bay leaves
  • 2 tablespoons red wine vinegar
  • 1 medium onion, chopped (1 cup)
  • 2 cups long-grain rice
  • 2 teaspoons kosher salt
  • + 6 more ingredients
    • 1 cup chicken broth
    • 2 15-ounce cans black beans, undrained
    • 2 medium cloves garlic, minced (1 tablespoon)
    • 1 large green or red pepper, chopped (1 cups)
    • ½ cup sliced scallions (optional)
    • ¼ teaspoon ground cumin

In a medium saucepan, combine 4 cups of water with 1 teaspoon of the salt and 1 ½ teaspoons of the olive oil. Bring to a boil. Stir in the rice, cover, and reduce heat to low.
