Ingredients

  • ½ cup finely chopped onion
  • ½ teaspoon dried thyme
  • 1/8 teaspoon ground red pepper
  • 3 cups frozen black-eyed peas (about 1 pound)
  • Pickled Onions:
  • ½ teaspoon black pepper
  • ½ pound diced ham (about 1/4 inch thick)
  • + 9 more ingredients
    • 1 teaspoon sugar
    • 1 cup finely chopped onion
    • 1 teaspoon vegetable oil
    • Dash of ground red pepper
    • ½ teaspoon salt
    • 1 (15.75-ounce) can fat-free, less-sodium chicken broth
    • Peas:
    • 1 ½ tablespoons cider vinegar
    • 2 garlic cloves, minced

To prepare onions, combine vinegar, sugar, and dash of red pepper in a microwave-safe bowl. Microwave at high 25 seconds; stir until sugar dissolves.
