Braised Short Ribs with Chocolate and Rosemary

Ingredients

  • 2 tablespoons fresh parsley
  • ¼ cup carrots
  • 1 very large fresh thyme sprig
  • ¼ cup pancetta (Italian bacon)
  • 2 tablespoons unsweetened cocoa powder (preferably Dutch-process)
  • 3 tablespoons bittersweet chocolate
  • 3 garlic cloves
  • + 9 more ingredients
    • ¼ cup shallots
    • 3 cups low-salt chicken broth
    • 2 cups dry red wine
    • 1 bay leaf
    • 6 pounds bone-in short ribs
    • 1 teaspoon fresh rosemary
    • 2 cups canned diced tomatoes
    • ¼ cup celery
    • 1 ½ cups onions

Heat heavy large pot over medium heat. Add pancetta and sauté until crisp. Using slotted spoon, transfer pancetta to paper towels to drain. Sprinkle ribs with salt and pepper.
