Braised Winter Greens with Bacon


  • 2 tablespoons yellow mustard seeds
  • 8 slices (about 10 oz.) applewood-smoked bacon, chopped
  • Kosher salt and freshly ground black pepper
  • ¼ cup extra-virgin olive oil, divided
  • 2 tablespoons red-wine vinegar
  • About 2 cups reduced-sodium chicken broth
  • 6 pounds mixed winter greens, such as Swiss chard, mustard greens, and/or kale
