Broccoli and Cheddar Soup

Ingredients

• 2 tablespoons sour cream
• 2 cups shredded sharp cheddar cheese (about 5 ounces)
• 2 cups water
• 2 cups low-sodium chicken broth or water
• 1 medium russet potato (about 8 ounces)
• Freshly ground black pepper
• Kosher salt
