Broiled Vegetables with Toasted Israeli Couscous

  • 3 tablespoons fresh basil
  • ¾ cup Israeli couscous
  • ½ cup red onion
  • 1 garlic clove
  • medium zucchini
  • 2 red bell peppers
  • 1 yellow summer squash
  • + 3 more ingredients
    • 1 ½ tablespoons balsamic vinegar
    • 1 ¾ cups chicken broth or water
    • 3 tablespoons olive oil

Whisk together balsamic vinegar, garlic, 2 tablespoons oil, and salt and pepper to taste. Preheat broiler.
