Cacciatore Style Chicken Madeira over linguine

Ingredients

  • 1 lb ounces cooked linguine with freshly grated Parmesan Cheese
  • Serve over:
  • 2 T freshly chopped parsley
  • 28 oz can diced tomatoes with Italian seasonings, including liquid
  • 1 c chicken broth
  • ½ c Madeira Wine
  • 2 T flour
  • + 13 more ingredients
    • 3 oz pancetta, diced
    • 2 bay leaves
    • ¼ t red pepper flakes
    • 4 clove garlic, sliced
    • 10 oz crimini mushrooms, thickly sliced
    • 1 medium green pepper, diced
    • 1 medium red pepper, diced
    • 1 large onion diced
    • 4 T olive oil, divided
    • ¼ t freshly ground pepper
    • ½ t kosher salt
    • 4 split chicken breasts, with skin
    • 4 bone in chicken thighs, with skin

Sprinkle both sides of chicken with salt and pepper. Heat 3 tablespoons olive oil in large skillet (12" to 14") with high sides over medium high heat.
