Cashew Chicken with Bok Choy Recipe

Ingredients

  • 1 medium sweet red pepper, julienned
  • 1 cup chopped celery
  • 1 pound boneless skinless chicken breasts, cut into strips
  • Hot cooked rice
  • ½ cup salted cashews
  • 1 head bok choy, trimmed
  • 1/8 teaspoon pepper

    • ¼ teaspoon salt
    • ¼ cup sherry or additional chicken broth
    • ¼ cup chicken broth
    • 1 teaspoon cornstarch
    • 1 tablespoon canola oil
    • ¼ cup stir-fry sauce
    • 1 teaspoon minced garlic
    • ½ cup chopped onion
