Cashew Chicken with Scallions

Ingredients

  • Parsley for garnish
  • Hot cooked rice
  • ½ cup salted cashews
  • 1 red pepper cut into 1x1/4 inch strips
  • 6 green onions with tops, cut into 1 inch pieces
  • 2 chicken breasts boned & skinned & cut into 1 1/2 by 1/2 inch strips
  • 2 tablespoon vegetable oil
  • + 5 more ingredients
    • 2 teaspoon sugar
    • 1 tablespoon cornstarch
    • 2 tablespoon dry sherry
    • 2 tablespoon soy sauce
    • ½ cup picante sauce (Pace or other brand)

Combine picante sauce, soy sauce, sherry, conrstarch & sugar in a small bowl. Heat oil in large skillet over medium-high heat.
