CATFISH CHOWDER

Ingredients

  • 4 cup(s) chicken broth
  • Chopped parsley (optional)
  • Salt and pepper
  • 1 cup(s) milk
  • ½ cup(s) flour
  • 4 catfish fillets, cut into 1 inch cubes
  • 1 can(s) corn, drained (16 ounce can)

    • 2 cup(s) water
    • 4 cup(s) peeled, diced potatoes
    • ½ cup(s) sliced celery
    • 1 cup(s) chopped onion
    • 4 tablespoon(s) butter

Heat 1 T. butter in large stock pot. Sauté onion and celery until tender. Add potatoes, chicken broth and water. Cover and simmer 20 minutes. Add corn and catfish.
