Cauliflower Risotto with Brie and Almonds

Ingredients

  • 5 ounce Brie
  • 1/3 cup sliced almonds
  • 1/3 cup dry white wine
  • ½ head cauliflower
  • 3 thyme sprigs
  • 4 cups chicken stock or low-sodium chicken broth
  • 2 tablespoons olive oil
  • + 3 more ingredients
    • 1 ½ cups Arborio rice
    • 1 tablespoon unsalted butter
    • 2 ½ cups water

Bring broth, water, and thyme sprigs to a bare simmer in a medium saucepan.
