Cheddar And Broccoli Soup

Ingredients

  • 1 cup (4 ounces) shredded low-fat extra-sharp cheddar cheese
  • 2 cups 1% milk
  • 1/8 teaspoon ground red pepper
  • ½ teaspoon salt
  • ½ teaspoon dried thyme
  • 1 clove garlic, chopped
  • 1 onion, chopped
  • + 4 more ingredients
    • ¼ cup unbleached or all-purpose flour
    • 1 cup water
    • 1 can (14 ½ ounces) fat-free reduced-sodium chicken broth
    • 2 heads broccoli

Cut the florets from the broccoli heads. You should have 6 cups florets. Reserve the stems for another use.
