Cheddar, Broccoli and Chicken Pasta Skillet


  • 2 large or 3 medium boneless skinless chicken breasts, cut into 1 inch chunks seasoned with a bit of salt and black pepper
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, chopped
  • ½ teaspoon dried oregano
  • ½ teaspoon red pepper flake (omit if you don’t want the spice)
  • 8 ounces pasta of choice (I used
  • + 7 more ingredients
    • 1 and 2/3 cup chicken stock
    • 2 and ¾ cups water, divided
    • 8 ounces broccoli florets, chopped into small pieces
    • ½ cup heavy cream
    • 1 cup cheddar cheese
    • ½ teaspoon salt
    • ½ teaspoon black pepper

Heat 1 tablespoon of oil in a very large non-stick skillet. Add the chicken chunks and cook until the chicken is browned on both sides, and almost entirely cooked through.
