Chicken And Chickpea Fattoush

Ingredients

  • 2 teaspoons Dijon mustard
  • 6 cups chopped romaine lettuce
  • ½ teaspoon salt
  • 1 cup chopped English cucumber
  • 1 cup halved cherry tomatoes
  • ¼ cup chopped fresh mint
  • ½ teaspoon black pepper
  • + 8 more ingredients
    • ¼ cup olive oil
    • 1 ½ cups shredded rotisserie chicken breast
    • ½ cup fresh lemon juice
    • 2 garlic cloves, crushed
    • ¼ cup chopped fresh flat-leaf parsley
    • 2 (6-inch) multigrain pitas, torn into bite-sized pieces
    • ¼ cup chopped red onion
    • 1 (16-ounce) can chickpeas (garbanzo beans), rinsed and drained

Combine first 6 ingredients in a large bowl, stirring with a whisk. Add romaine lettuce and remaining ingredients; toss gently.
