Ingredients

  • 6 ounces chopped Spanish chorizo
  • 2 cups fat-free, lower-sodium chicken broth
  • 2 cups water
  • 1 medium carrot, chopped
  • 1 bunch fresh flat-leaf parsley
  • 3 garlic cloves
  • 1 onion, quartered
  • + 10 more ingredients
    • 2 (6-ounce) skinless, boneless chicken breast halves
    • 3 cups cubed red potato
    • 1 ½ cups chopped onion
    • 1 medium red bell pepper, chopped
    • 1 tablespoon minced fresh garlic
    • ½ teaspoon ground cumin
    • ¼ teaspoon kosher salt
    • ¼ teaspoon saffron threads
    • 1 ½ tablespoons sherry vinegar
    • 2 tablespoons chopped fresh parsley

1. Combine first 6 ingredients in a saucepan over medium-high heat. Add chicken to pan; bring mixture to a boil. Reduce heat, and simmer 14 minutes or until chicken is done.
