Ingredients

  • ½ teaspoon cayenne pepper
  • 2 tablespoons chopped garlic
  • 2 green bell peppers
  • 1 teaspoon fresh thyme
  • ½ cup vegetable oil
  • 4 scallions
  • 2 celery stalks
  • + 14 more ingredients
    • 1 teaspoon freshly ground black pepper
    • 1 teaspoon hot sauce (preferably Crystal)
    • 1 teaspoon filé powder (optional)
    • 1 ½ teaspoons Worcestershire sauce
    • 1 teaspoon paprika
    • 1 pound andouille
    • 8 cups chicken stock or low-sodium chicken broth
    • 3 pounds skinless, boneless chicken thighs
    • 2 bay leaves
    • Steamed rice
    • 1 tablespoon kosher salt
    • 2 cups fresh okra
    • 2 medium onions
    • 1 cup all-purpose flour

Combine 1 tablespoon salt and next 3 ingredients in a small bowl; sprinkle all over chicken. Heat 1/2 cup oil in a large heavy pot over medium heat.
