    • 1 pound(s) shrimp - small or medium, peeled and deveined
    • 2 bay leaves

    • 2 chicken thighs, boned, cut into 1" pieces (use 3 cups chicken breast for all white meat)
    • ¼ teaspoon(s) each of dried thyme, cumin, allspice and cayenne pepper

    • 2 chicken breasts, small, boned, cut into 1" pieces
    • 8 ounce(s) andouille sausage or spicy sausage, cut into ¼" thick rounds
