Chicken Breasts with Parmesan-Herb Stuffing

Ingredients

  • 2 Tbs. fresh breadcrumbs (English muffins make great crumbs)
  • 2 Tbs. finely chopped fresh flat-leaf parsley
  • 2 boneless chicken breast halves, skin on
  • Salt and freshly ground black pepper
  • 2 Tbs. plus 1 tsp. unsalted butter, softened
  • 1-½ tsp. grainy mustard
  • 1 Tbs. finely chopped fresh tarragon or-basil
  • + 2 more ingredients
    • 1 Tbs. oil
    • ¼ cup freshly grated Parmesan, preferably Parmigiano Reggiano

Heat the oven to 450°F. In a small bowl, mix the Parmesan, parsley, tarragon, breadcrumbs, mustard, and 2 Tbs. of the butter until blended.
