Ingredients

  • ¼ cup fresh flat-leaf parsley,roughly chopped
  • 1 celery stalk, diced
  • ¼ cup all-purpose flour
  • 1 3 1/2- to 4-pound chicken, cut into pieces
  • 1 28-ounce can plum tomatoes
  • ¼ cup olive oil
  • 3 sprigs fresh thyme
