Ingredients

  • ¼ teaspoon salt
  • ¼ cup dry white wine
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon olive oil, divided
  • Cooking spray
  • ¼ cup all-purpose flour
  • 2 tablespoons butter
  • + 8 more ingredients
    • ¼ cup chopped fresh parsley
    • 3 garlic cloves, minced
    • 2 tablespoons fresh lemon juice
    • ¼ cup dry white wine
    • ¾ cup egg substitute
    • 1/8 teaspoon hot pepper sauce
    • 8 (4-ounce) skinless, boneless chicken breast halves
    • ¼ cup (1 ounce) grated fresh Parmesan cheese

Combine first 8 ingredients in a shallow dish. Place each chicken breast half between 2 sheets of plastic wrap, and pound to 1/4-inch thickness using a meat mallet or rolling pin.
