Ingredients

  • 8 chicken thighs
  • 1 ½ teaspoons salt
  • 2 ribs celery, cut into 1/4-inch slices
  • 2 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 tablespoon flour
  • 1 ½ cups canned crushed tomatoes in thick puree
  • + 9 more ingredients
    • ¼ teaspoon dried thyme
    • 2 tablespoons chopped fresh parsley
    • ¼ teaspoon fresh-ground black pepper
    • 1 ½ cups canned low-sodium chicken broth or homemade stock
    • 1 bay leaf
    • 1 tablespoon cooking oil
    • 2 carrots, cut into 1/4-inch slices
    • 1 onion, chopped
    • 1/8 teaspoon cayenne

1. In a large, heavy pot, heat the oil over moderately high heat. Season the chicken with 1/4 teaspoon of the salt and add it to the pan.
