Chicken Paillards with Clementine Salsa
Ingredients
- 2 tablespoons olive oil
- ½ cup red onion
- 1 cup cherry tomatoes
- 4 clementines
- 4 5-ounce chicken breast halves
- 1 serrano chile
- ¼ cup fresh cilantro

- 2 tablespoons extra-virgin olive oil
- ¼ cup fresh basil
- ½ cup celery
