Ingredients

  • 3 tablespoons unsalted butter
  • ¾ cup low-sodium chicken broth
  • ¼ cup chopped fresh parsley
  • 2 whole boneless, skinless chicken breasts (1 1/2 lb.), rinsed, patted dry
  • ¼ cup all-purpose flour
  • Salt and pepper
  • 2 tablespoons vegetable oil

Place chicken between 2 sheets of waxed paper and pound until thin. Sprinkle chicken with salt and pepper and dredge in flour.
