Ingredients

  • Kosher salt and freshly ground black pepper
  • ¾ cup lower-salt chicken broth
  • 1 Tbs. unsalted butter
  • ¼ cup chopped fresh flat-leaf parsley
  • 2 Tbs. fresh lemon juice; more as needed
  • 2 medium cloves garlic, thinly sliced
  • 3 Tbs. capers, rinsed and chopped
  • + 2 more ingredients
    • 2 to 3 Tbs. extra-virgin olive oil; more as needed
    • 8 boneless, skinless, thin-cut (¼ to ½ inch thick) chicken breast cutlets, (about 1-½ lb.)

Season the chicken with 1 tsp. salt and 1/2 tsp. pepper. Heat 1 Tbs. of the oil in a 12-inch heavy-duty skillet over medium-high heat.
