Chicken Piccata

Ingredients

  • Buttered noodles.
  • sliced lemons and parsley sprigs for garnish
  • 2 T chopped fresh Italian parsley, divided in half
  • 2 T capers, drained
  • 4 sun dried tomatoes in olive oil, patted dry and rough chopped
  • ½ tsp, lemon zest
  • 2 T lemon juice

    • 2 oz cremini or other mushrooms, fresh not dried
    • 1 2 cups chicken broth or stock
    • 1 t minced garlic
    • ¼ c dry white wine (something you would drink, not cooking wine)
    • 4 T butter divided in half
    • 2 T olive oil
    • salt, pepper, and about one cup of all purpose flour
    • 8 chicken tenders, tendons removed

Place 2 tenders at a time in a heavy-duty zip top bag and gently pound flat. Season with salt and pepper, dust with flour and shake off the excess. Do not dredge.
